This is a very good crepes recipe - never there is a problem with turning these delicate, thin pancakes over. And the berry sauce adds a very refreshing, well-balanced sweet-and-sour note to this French delicacy.

Ingredients:
3 large eggs
3 cups milk (preferably whole)
1 cup flour (all purpose)
1 tablespoon sugar
1/2 teaspoon salt
1-2 tablespoons oil
2 cups mixed berries, fresh or frozen (I used strawberries, raspberries, and blackberries)
1/4 cup sugar
1 tablespoon corn starch
1/2 cup water

Directions:
Break the eggs, add 1 tbsp sugar, 1/2 tsp salt, all flour, and 1/2 cup milk.
Mix well, then gradually add the remaining milk, and, at the end, oil.
Let stand 15-20 minutes.
Fry crepes over medium heat, until golden, on both sides.
For the sauce, in a saucepan mix 1/4 cup sugar and 1 tablespoon cornstarch, add water, and mix well.
Add berries and cook over medium heat until the sauce thickens.
Serve warm over crepes.
