Salmon patties are often made with canned salmon, but these use fresh or frozen fish and are so much better! They can be made with any other fish,  but I usually use frozen salmon. Frozen fish often becomes dry when cooked, but not in this recipe. These patties are tender, juicy, and easy to make because they are fried like pancakes. And they go like hotcakes, too!

Ingredients:
1 lb (about 500g) salmon or other fish
1 medium onion or 1/2 of a big one
1 egg
2 tablespoons mayonnaise
1 tablespoon milk
2 tablespoons flour
about 1/2 teaspoon salt
about 1/4 teaspoon black pepper

Directions:
Cut fish into small pieces (if frozen, do not thaw it completely; it makes it easier to cut and juicier when cooked); put into a bowl.
Chop the onion, and to the fish.
Add an egg, mayo, milk, flour, salt, pepper, and mix well.
Cover and refrigerate for about an hour (can be a few hours).
Warm ghee or oil over medium heat; fry salmon patties like pancakes.
Turn over, cover, and reduce heat to medium low.
Serve on their own or with potatoes or any other side dish.
Can be used to make fish burgers.
Green salad goes very well with these patties.
